Information on the Gluten-free diet

Gluten is the protein found in foods such as wheat, barley, rye and other grain foods. A gluten-free diet is a diet which does not contain gluten.

A gluten-free diet needs to be followed by people who have celiac disease. This is because in this disease, gluten injures the lining of the small intestine. This results in weight loss, bloating, diarrhea, gas, abdominal cramps, or vitamin and mineral deficiencies. By following a gluten-free diet, patients with this disease will find their condition to improve. People who have dermatitis herpetiformis, which is a skin disorder, also have low gluten tolerance. They too need to follow a gluten-free diet due to their condition.

A gluten free diet is not very easy to put together as grains are used in the preparation of many foods. This makes it difficult to tell, which ingredients contains gluten. Here’ a look at how you can tell if gluten in included in the food you eat.

Gluten in food products can be avoided by looking for food labels. Foods with food labels that show vegetable protein, malt or malt flavoring, modified starch or modified food starch, hydrolyzed vegetable protein and vegetable gum should be avoided as they contain gluten. Any food labels which include words such as stabilizer, starch, flavoring, emulsifier and hydrolyzed plant protein cannot be taken as they contain gluten.

In order to strictly follow a gluten-free diet, you need to review all foods with a registered dietician. This will help you to determine, which foods in different categories do not contain gluten. The categories considered include milk and milk products, bread and grain, meat and meat substitutes, snack and desserts, beverages, fat, oils, fruits, vegetables, condiments, soups, snacks, desserts, seasoning as well as prescription products.

If you want to know how foods from different categories are put together in a diet plan, let’s take one as an example.  In this sample diet, breakfast can include half-a-cup of rice, one cup of skimmed milk, one medium sized banana, half-a-cup of orange juice and one teaspoon sugar. Lunch can include three ounces of baked chicken, half-a-cup of rice and green beans, half-a-cup of apple juice, and half-a-cup of ice-cream.  Dinner can include three ounces of sirloin steak, one medium-sized baked potato, half-a-cup of peas, half-a-cup of fruited gelatin, one tablespoon of butter, one cup of tea and one teaspoon of sugar.

Today, there are many companies that produce gluten-free products. You can also find support groups, which provide delicious recipes and help people who are in need of a gluten-free diet regimen to adapt to the diet.
